Strawberry Feta Balsamic Pasta Salad
This quick, flavorful pasta salad is made with fresh, seasonal ingredients—perfect for summer and easy to source locally!
Ingredients
1 lb dry bow tie pasta
1 lb strawberries, washed and sliced
1 cup crumbled feta cheese
2–3 cups arugula (or other leafy greens of your choice)
1/4 cup balsamic glaze
1/4 cup olive oil
Instructions
Cook pasta according to package directions. Drain and let cool.
In a large bowl, combine cooled pasta, strawberries, feta, and arugula. Toss gently to mix.
Drizzle with balsamic glaze and olive oil. Toss again until evenly coated.
Serve immediately or cover and refrigerate for up to 4–5 days (or as long as the strawberries stay fresh).
